Sausage Potato Kale Soup
There is no question, as I look out my window at the snow falling, that it is winter. As much as I dislike the cold that comes with this season, there are several things that I love about winter. Soup, for example.
I love soup and winter is soup season! I like to make large batches and freeze or give extras to my friends who need a break and a quick meal. I love the idea of a soup swap! How much fun if you and several friends make large batches of different soups and swap the extras to freeze?! So maybe I’m a little over excited about soup but I am cold and it is warm, enough said.
Below is one of my favorite soups to make: Sausage, potato, kale soup.

Sausage, Potato, Kale Soup
Before you start: You need to know, I love to cook. One reason I love it is because you can make it your own and doesn’t have to be exactly like the recipe. That said, I often make things without recipes, eyeballing ingredients and tasting as I go. Soup is perfect for this way of cooking so please, make this soup your own!
What you’ll need:
- 4 cups of chicken broth (I like Swanson’s – click the link if you need to stock your pantry)
- 1 lbs of sausage (I’ve used pork and turkey so use your favorite kind)
- 2 lb of red potatoes (skin on)
- Kale (amount depends on your liking.)
- 1/2 cup of butter
- 1 small onion
- Salt and pepper to taste
Instructions:
In a soup pot (whatever you cook soup in), melt the butter.
Dice the onion and add it to the butter.
Add and brown sausage.
Once sausage is browned add the chicken stock.
After the chicken stock is simmering, add your red potatoes (cut into bite size pieces).
Add your desired amount of kale.
Let your soup simmer for about 20-30 minutes.
Salt and pepper to taste.
